John draws culinary inspiration from his upbringing in rural surrounds, understanding the efforts of what it takes for farmers and growers to develop produce of an exceptional quality. The restaurant also recently welcomes Executive Chef Nathan West, joining Katers from such Sydney kitchens as the Bathers Pavilion, Assiette, Felix and Chiswick at the Gallery. With a passion for local produce, moving to the Southern Highlands has been a long overdue aspiration for Nathan.
